4  c.  dry H-E-B Ziti Pasta

1  can  pumpkin

2  Tbsp.  all-purpose flour

2  tsp.  garlic powder

1/2  tsp.  salt

1/4  tsp.  ground nutmeg

•  pinch cayenne pepper

4  chipotle peppers and adobo sauce, chopped (add more to taste)

1  can (12 oz.)  evaporated fat-free milk

4  links  chicken sausage, fully cooked, cubed

2  c.  fresh spinach, washed

1 1/2  c.  H-E-B 2% MIlk Shredded Mozarella Cheese, divided

1/2  c.  H-E-B Shredded Parmesan Cheese, divided

3  slices  cooked bacon, chopped and crumbled


Preheat oven to 425°F. Spray 4-quart baking dish with nonstick cooking spray.

Prepare pasta according to package directions. Reserve 1 cup pasta cooking water and set aside for later use. Drain pasta and return to cooking pot.

Meanwhile, combine pumpkin, flour, garlic, salt, nutmeg, cayenne, and chipotle peppers in medium skillet over medium heat. Slowly add evaporated milk, stirring until smooth. Cook 2 to 3 minutes, stirring occasionally, or until mixture begins to thicken slightly.

Pour mixture over pasta in pot. Add sausage and reserved pasta cooking water; stir well.

Spread half of pasta mixture into prepared baking dish. Top with spinach, 1/2 cup Mozzarella, and 1/4 cup Parmesan cheese. Cover with remaining pasta mixture.

Top with remaining cheese and bacon. Lightly spray piece of foil with nonstick cooking spray. Cover dish with foil, greased side down.

Bake 20 minutes or until heated through.
