Pumpkin Bread

3 1/2  c.  all purpose flour

2  tsp.  baking soda

1 1/4  tsp.  salt

2 1/2  c.  sugar

3  tsp. each:  nutmeg and cinnamon

1/4  c.  flaxseed

2  c.  canned pumpkin

1  c.  vegetable oil

4  eggs


Preheat oven to 350°F. Spray 3 loaf pans with nonstick cooking spray.

In a large bowl, combine flour, baking soda, salt, sugar, nutmeg, cinnamon, and flaxseed.

Add 2/3 cup water, pumpkin, oil, and eggs.

Pour batter into prepared pans and bake for 1 hour until toothpick inserted in center comes out clean.
