1  tbsp.  vegetable oil

1/2  small onion, sliced and separated into rings

1/2  cup  chopped green bell pepper

1  pound  lean ground beef

1/2  cup  crushed tortilla chips

2  teaspoon  fajita seasoning

1  tbsp.  butter

2  cups  HCF mashed potatoes with gravy (1 packet each: potatoes and gravy)


Heat oven to 400 degrees.

Spray a 2-quart loaf pan with non-stick cooking spray and set aside.

Heat oil in a large skillet over high heat.

Add onion and cook until crisp brown on edges (about 2 minutes).

Add green bell pepper and cook 2 more minutes; remove from heat.

Combine onion-bell pepper mixture, ground beef, tortilla chips and fajita seasoning in a large mixing bowl.

Place meat mixture in prepared loaf pan and press over the bottom and up the sides of the loaf pan to make a shell 1/2 to 3/4 inch thick.

Fill the center with prepared mashed potatoes and dot with butter.

Bake for 45-50 minutes or until Quick response thermometer reads 160 degrees.

Drain excess liquid and let sit for 10 minutes.

Top with gravy and serve
