2  tsp.  canola oil

1  lb.  pork tenderloin, cut into 1-inch round slices

1  tsp.  garlic powder

1  tsp.  onion powder

1/2  tsp.  black powder

1  Tbsp.  chipotle in adobo, chopped

2  Tbsp.  dried cherries

1/3  c.  cherry pomegranate juice frozen concentrate, undiluted


Heat oil in a large nonstick skillet on Medium-High.

Season pork with garlic powder, onion powder, and black pepper. Sear 3 minutes per side. Remove to a plate.

Add 1/3 cup water to pan and stir the bottom with a wooden spoon to loosen any browned bits.

Add chipotle in adobo, dried cherries, and juice concentrate. Bring sauce to a simmer and let reduce 3 minutes. Return pork to pan and turn to coat with sauce.

Serve with sweet potatoes.
