H-E-B World of Sandwiches: Catch-O-The-Day Po Boy
1 8 ounce package frozen H-E-B Great Catch Regular or Spicy Popcorn Shrimp
4 white or wheat submarine rolls
8 tablespoons H-E-B Great Catch creole mustard
1/2 head iceberg lettuce, shredded
Heat oven to 425°F. Place shrimp on a large baking sheet and heat 15 minutes, according to package directions. Remove and let stand 5 minutes.
Meanwhile, split rolls horizontally. Place on a second baking sheet, cut side up. Place in oven 2 to 3 minutes to toast lightly.
Spread cut sides of rolls with 1 tablespoon mustard per side. Place shrimp on bottom halves of rolls; top with a generous amount of shredded lettuce. Cover with tops of rolls and serve.
