2 Tablespoons Hill Country Fare Canola Oil
1 pound H-E-B ground chicken
2 cups H-E-B frozen fajita blend vegetables
1 package Lawry's® taco spices & seasoning mix'
1 can (10 oz.) Hatch tomatoes & green chilies
1 package (12 count) Hill Country Fare taco shells
Heat a large skillet on high heat for 2 minutes. Add oil, ground chicken and fajita blend vegetables to skillet. Stir-fry the mixture until meat and vegetables are browned (about 5 minutes). Add the taco seasoning mix, Hatch Tomatoes & Green Chilies and 2/3 cup WATER to the chicken mixture and reduce heat to low. Cover the skillet and allow meat to cook 15 minutes.
Heat the taco shells according to packagedirections. Spoon the pollo guisada in the tacoshells and serve hot
