2  Tbsp.  canola oil

1  lb.  boneless skinless chicken breasts, cut into small pieces

2  Tbsp.  chopped garlic

1  tsp.  salt

1  onion, chopped

2  poblano peppers, chopped

2  Tbsp.  chili powder

2  Tbsp.  ground cumin

1 1/2  qts.  chicken broth


Bring a large stock pot to High heat and add oil. Season chicken with garlic, salt, and pepper. Add to hot pan and cook 10 minutes.

Add remaining ingredients and bring to a boil. Reduce to a simmer, cover, and cook 1 hour.
