whole wheat lasagna noodles

finely chopped kale (packed tightly)

diced cauliflower

![]() Instructions ![]() Preheat oven to 400°F.
![]() Cook lasagna noodles according to package directions; drain and set aside.
![]() Meanwhile, cook beef over medium heat in large skillet until no longer pink. Stir in marinara sauce, kale and cauliflower; heat through.
![]() Place noodles on wax paper. Spread 1/3 cup sauce mixture and 2 Tablespoons cheese over each noodle; roll up tightly and place each noodle seam side down in an ungreased 13 x 9 inch baking dish. Top roll-ups with remaining sauce.
![]() Bake uncovered approximately 15 minutes, or until heated through.
