1 1/2 cups uncooked long-grain or jasmine rice
1 (14 ounce) can coconut milk, regular or light
1 cup Hill Country Fare Chicken Broth
1 (8 ounce) can crushed pineapple, drained
1/4 teaspoon crushed red pepper flakes
1/2 cup chopped fresh cilantro or parsley
1/2 cup chopped red bell pepper, optional
Bring coconut milk, broth, pineapple, salt and pepper to a boil in a 2-quart saucepan over Medium-High heat.
Reduce heat to Low and stir in rice. Cover pan with a tight-fitting lid and simmer 15 minutes or until rice is tender. Fluff with a fork and stir in cilantro or parsley and bell pepper, if desired. Cover and keep warm until ready to serve
