4  large peaches

1  c.  Central Market™ Organics Frozen Blueberries

⅓  c.  H-E-B Brown Sugar

*  juice of 1 lemon

2  c.  H-E-B Creamy Creations® 1905 or No Sugar Added Vanilla Ice Cream


Bring 1 quart of water to boil over high heat. Cut a criss-cross on the bottom of each peach and dip into boiling water for 2 minutes. Plunge peaches into ice water to loosen the skins. Peel each peach and cut in half or quarters to easily remove the pit. Place a peach half on a 10 x 10" square of aluminum foil.

Spoon 2 tablespoons of frozen blueberries into each peach half. Sprinkle 2 teaspoons of brown sugar and 1 teaspoon of lemon juice on each peach. Fold up foil and seal the peach.

Heat the grill or charcoal to high heat (325°F). Make sure grill grate is clean. Place foil packets on grill and cook for 15 minutes. Open packets and serve with a scoop of ice cream.
