1 c. H-E-B 100% Whole Wheat Penne Pasta, Uncooked
1 c. H-E-B Champagne Sweet Tomatoes, washed and halved
2 c. H-E-B Baby Spinach
2 Tbsp. H-E-B Basil Pesto
1/4 c. H-E-B Parmesan Cheese, Grated (Optional)
Prepare pasta according to package instructions.
While pasta cooks, remove any long stems from spinach.
When pasta is done, drain pasta well and empty into medium-sized mixing bowl. Toss with tomatoes, spinach, and pesto.
Portion into serving bowls and top with a tablespoon of Parmesan cheese if desired.
