1 bag (16 oz.) H-E-B steamable rice with corn and poblanos
1 box (8 oz.) H-E-B great catch® tilapia fillets with adobo sauce diced into small pieces
1 pkg. (8 oz.) Hill Country Fare cotija cheese crumbled
8 Large poblano peppers split lengthwise with seeds and ribs removed
1 can (19.75 oz.) H-E-B sabor tradicional flor de calabaza soup
Combine rice, fish and cheese in a mixing bowl.
Fill peppers with mixture and lay in a microwave safe casserole dish.Cover with plastic wrap.
Microwave on high at 3 minute intervals until peppers are tender andsteaming. Leave covered and let stand for five minutes.
Meanwhile warm soup in microwave following package instructions.
Spoon 3-4 tablespoons of soup into a shallow plate and place stuffedpepper in the center of sauce.For added flavor, grill cooked peppers in a stove top grill skillet
