Pecan Sandies

1  cup  H-E-B Butter

1  cup  H-E-B Powdered Sugar, sifted

1  tsp  Hill Country Fare Vanilla

2  cups  H-E-B All Purpose Flour

1/2  tsp  Salt

1  cup  Hill Country Fare Pecans for Cookies


Heat oven to 350ºF.

Combine butter, 1/2 cup of the powdered sugar and vanilla in a large mixing bowl and beat with an electric mixer for 3 minutes on high speed or until mixture is light and fluffy.

Add the flour salt and nuts to the butter mixture slowly on low speed of electric mixer until all ingredients are blended. Divide the cookie dough in half. Shape each cookie dough portion into a log 1 1/2 inches in diameter. Wrap the logs in plastic wrap and refrigerated for 1 hour or more (can be made a day in advance).

Cut the dough logs into 1/4-inch slices and place 1/2 inch apart on ungreased cookie baking sheets.

Bake cookies on the center oven rack for 15 minutes or until lightly browned on top. Remove the cookies from the baking sheet immediately and roll them in the remaining powdered sugar. Place cookies on a rack to cool before storing in container
