Breading:

crushed wheat crackers
1/3
cup
finely chopped Hill Country Fare Pecans

fresh chopped parsley, optional

teaspoons
or dried parsley, optional
![]() Instructions ![]() Heat oven to 400 degrees F. Spray a large sheet pan with nonstick spray or cover with foil.
![]() Season cutlets on both sides with salt, pepper, and garlic powder. Combine mustard and oil in a small bowl; spread mixture evenly over tops and sides of cutlets.
![]() Place crackers in a blender or food processor for breading; pulse a few times to make 1/2 cup fine crumbs. Chop pecans finely or pulse in food processor; combine with cracker crumbs and parsley, if desired.
![]() Sprinkle breading mixture evenly over tops of cutlets. Press gently to adhere; press any remaining breading down sides of cutlets. Transfer cutlets to a baking rack and place over prepared pan.
![]() Bake 15 to 20 minutes or until cooked thoroughly and browned lightly. Serve while hot.
