1 pound Red Potatoes, cut into 1 inch cubes
1 package (12 oz) H-E-B Chorizo
1 cup H-E-B Ready Fresh Go Chopped Onions
4 each H-E-B Fresher Lasting Roasted Poblano Peppers, thin sliced
1 cup H-E-B Grated Cotija Cheese
Combine cubed potatoes and 1/2 cup water in a microwave-safe bowl. Cover with plastic wrap. Cook potatoes in microwave oven on High power for 6 minutes.
Cook chorizo according to package directions and drain excess fat. Add chopped onions and continue to cook over medium high heat for 2 minutes. Add cooked and drained potatoes and stir in sliced roasted poblano peppers. Season Mixture with salt and top with grated Cotija cheese
