Papa's Spicy Marinated Olives

Prep Time:

16   oz.  green olives, preferably Castelvetrano or any large Spanish variety

1  serrano pepper, thinly sliced

2  cloves  garlic, thinly sliced

3  lemons (1 zested & 2 juiced)

1/4  tsp.  extra-virgin olive oil

1  salt  fresh rosemary, chopped

1/2  salt  red pepper flakes

3  sprigs  fresh thyme, finely chopped

1/2  tsp.  feta cheese, cubed (optional)


Place olives in a shallow bowl and toss with remaining ingredients. Marinate 1 hour in fridge before enjoying. Olives will keep about a week refrigerated
