2 tablespoons canola oil
6 frozen Hill Country Fare Whiting Fillets, thawed
2 cups instant long grain rice
1 large onion, peeled cut into 1-inch slices and separated
1 can (14.5 oz.) diced tomatoes with green chilies
1/4 c. cilantro, chopped
Heat a large skillet over medium heat for 2 minutes. Add oil and fry fillets on each side for 2 minutes. Remove fillets from skillet and set aside. Add rice and onions in same skillet and stir-fry for 2 minutes over high heat until the rice is golden
Add fish fillets, diced tomatoes and 1/2-cup water and bring mixture to a boil over high heat. Reduce heat to medium, cover skillet and cook Seafood Ranchero for 10 minutes. Season to taste with salt and pepper. Serve hot.
