3 tablespoons butter or margarine
1/2 c. sliced almonds
4 frozen Pollock or Whiting Fish Fillets, thawed
1/2 teaspoon dried crushed basil
* juice of 1 lemon
Heat a large skillet over medium high heat for 3 minutes. Add 2 Tablespoons butter and almonds and stir-fry over medium heat until almonds are golden brown. Remove fried almonds from skillet and place on sheet of foil. Retain skillet for fish.
Season Hill Country Fare Fish Fillets with crushed basil, salt and pepper to taste.
Using the same skillet, add the remaining butter and heat over medium high heat for 1 minute. Pan fry flounder fillets for 3 to 4 minutes per side over medium high heat. Sprinkle the lemon juice and fried almonds over fish and cook for 1 more minute and serve.
