Oven-Roasted Rosemary Potatoes

2  tablespoons  H-E-B Extra Virgin Olive Oil

2  packages (16 oz. eac  H-E-B Ready Fresh Go!® Rosemary Seasoned Red Potatoes

1/2  cup  chopped fresh parsley


Heat oven to 400F. Place olive oil in 2-quart baking dish and set aside.

Microwave each package of potatoes on high for 5 minutes.

Open packages carefully and place potatoes in prepared baking dish. Add rosemary seasoning packets to potatoes. Toss potatoes with oil and seasoning to coat well. Bake potatoes on center oven rack for 5 to 10 minutes or until golden. Top with chopped parsley, toss, and serve.
