Cook Time:

8  fresh large ripe tomatoes (or 12 plum tomatoes)

1  teaspoon  salt

1/4  teaspoon  freshly ground pepper

1  teaspoon  sugar

2  teaspoon  fresh thyme leaves


Preheat oven to 2500.

Spray a baking sheet with vegetable coating.

Cut large tomatoes into thick slices (cut plum tomatoes in half lengthwise).

Arrange tomatoes on prepared baking sheet (arrange plum tomatoes cut side up).

Brush tomatoes with olive oil.

Sprinkle with salt, pepper, sugar and thyme.

Place in oven.

Bake 2 hours, turn to "warm" setting and leave overnight.

They should be wrinkly and shrunken but still quite juicy when done.

Place in a sealed plastic container with wax paper between layers
