1  tsp.  ground cumin

1  tsp.  salt

1  tsp.  black pepper

4  frozen Tilapia filets

1  Tbsp.  avocado oil

1/2  lime, juiced

5  oz.  Power Greens Salad Blend

1 package  oz.  mango pico de gallo

1  medium avocado, cubed


Pre-heat oven to 400ºF. Mix dry seasonings in a small bowl and set aside. Rinse any ice crystals from surface of tilapia and blot dry with paper towels. Lightly coat with avocado oil and season both sides with seasoning mixture. Place on a rimmed baking sheet and squeeze fresh lime juice over each fillet. Bake 10-13 minutes, depending on thickness of fish. Remove from oven and cover loosely to keep warm.

Divide Power Greens between 4 plates and drizzle lightly with avocado oil (no more than 1 teaspoon per plate). Place warm tilapia on top of greens and top with mango pico de gallo and cubed avocado.

*Avocado oil is found in the olive oil section. It is a rich flavored high temperature oil that has many uses. A great quality olive oil is a perfect substitute if you cannot find avocado oil.
