* olive oil cooking spray
3/4 c. low-fat H-E-B Buttermilk
3/4 c. crushed tortilla chips
1/2 c. finely chopped pecans
1 lb. H-E-B Natural Chicken Tenders
* Dipping Sauce, combine the following:
1/2 c. H-E-B Southwest Marinade
1/2 c. H-E-B Lite Sour Cream
Heat oven to 400°F. Line a baking sheet with a wire rack; spray sheet and rack with non-stick cooking spray. Whisk buttermilk with egg in a shallow bowl.
Combine crushed chips and pecans on plate or sheet of wax paper. Dip chicken in buttermilk, then breading mixture; turning to coat both sides. Transfer to baking sheet.
Spray tops of chicken generously with cooking spray. Bake 10 minutes or until golden brown and cooked thoroughly. Serve chicken with dipping sauce.
