1 cup orzo pasta
2 tablespoons butter
1 medium red bell pepper
4 green onions, including tops
* salt and ground black pepper
Bring 2 quarts water to a boil in a 3-quart pot. Add orzo to boiling water and cook 3 minutes. Drain pasta and set aside.
While pasta cooks, dice bell pepper into 1/4-inch cubes. Chop green onions. Melt butter in a large skillet over Medium heat. Sauté bell pepper and green onion 3 minutes. Add orzo to pepper and onions in skillet and toss to blend. Season to taste with salt and pepper. Serve immediately.
