1  small head romaine lettuce, torn or cut into small pieces

1  small jicama, peeled, quartered and thinly sliced

1  small red onion, quartered and thinly sliced

3  navel oranges, peeled, halved and thinly sliced

2  tablespoons  pumpkin or sunflower seeds, optional

1  tablespoon  lime juice

1  tablespoon  white wine vinegar

1/2  teaspoon  salt

1/2  teaspoon  coarsely ground pepper

6  tablespoons  olive oil


Toss lettuce, jicama, onion and oranges in a large bowl.

Combine lime juice, vinegar, salt and pepper.

Pour oil slowly into lime juice mixture while whisking vigorously until dressing is smooth and satiny or emulsified.

Pour dressing over salad and toss lightly.

Sprinkle with pumpkin seeds if desired.

Serve immediately.

Note: Make a simpler dressing by whisking 2 tablespoons lime juice into 1/2 cup Italian dressing
