2 bacon slices or 2 Tbsp. olive oil
1 lb. fresh okra, washed and sliced
1 small onion, chopped
1/2 green bell pepper, chopped
2 celery sticks, chopped
2 Roma tomatoes, diced
1 can (8 oz) tomato sauce
* salt and pepper to taste
Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, crumble and set aside.
In same pan, sauté okra, onion, bell pepper and celery until tender. Add tomatoes, tomato sauce, salt and pepper; cook until hot and flavors are well blended.
Garnish with crumbled bacon, if desired.
