9 Squares, 3 Inches Each


1  can  12-oz H-E-B Evaporated Milk

2  eggs, beaten

1  can  (16 oz) solid pack pumpkin

2  tablespoon  margarine, melted

2  teaspoon  vanilla

3/4  cup  sugar

1/2  cup  Biscuit and Baking Mix

1  tablespoon  Pumpkin Pie Spice

*  whipped topping (optional)


Preheat oven to 350 degrees (375 degrees for glass dish).

Butter an 8x8 inch baking dish.

Combine all ingredients except whipped topping in a medium mixing bowl.

Beat 2 minutes with an electric mixer or 100 strokes by hand.

Pour into prepared baking dish.

Bake in preheated over for about 60 minutes or until knife inserted in center comes out clean.
