1 package (18.24 oz.) Hill Country Fare german chocolate cake mix
3 large Eggs or 3/4 cups hill country fare real egg
1/3 cup H-E-B Olive Oil
1 cup Hill Country Fare crushed pineapple with juice
1 teaspoon Hill Country Fare ground cinnamon
3 cups Peeled and shredded carrots
1/2 cup H-E-B Powdered Sugar
Heat oven to 350F. Line two 12-cupcake pans with foil cupcake liners. Spray the foil liners with non-stick cooking spray and set aside.
Combine cake mix, eggs, olive oil, crushed pineapple with juice and ground cinnamon in a large mixing bowl. Add 1/3 cup WATER and mix for 2 minutes on medium speed with an electricmixer. Stir in shredded carrots with a spoon.* Divide batter evenly into the cupcake liners.
Bake on center oven rack for 20 to 25 minutes until cupcakes are done. Cool cakes completely in pans on cake rack.
Cut out a small heart shape out of wax paper smaller than the top of the cupcake. Place the heart shape on top of the cupcake and sprinkle powdered sugar around the heart to make a heart design on top of the cupcake*Add-on for extra crunch: 1/2 cup HILL COUNTRY FARE PECAN PIECES and RAISINS (stir into cake batter with shredded carrots)
