2 Tbsp. H-E-B Olive Oil
1 medium yellow onion, diced
2 fresh carrots, diced
1 c. H-E-B Lentils
6 c. Central Market Organics Low Sodium Chicken Broth, divided
1/4 tsp. black pepper
1/4 tsp. cumin
1/4 tsp. ground cinnamon
2 c. instant brown rice
Heat oil in a stock pot, saut´ onion and carrots 3 minutes.
Add lentils, 2 cups broth, pepper, cumin, and cinnamon. Bring to a boil, simmer 5 minutes.
Add remaining broth, bring to a boil, and add rice. Return to a boil, reduce heat to Low, cover, and simmer 15 minutes.
Remove from heat and serve. Salt to taste.
