1 cup pancake mix
1 can (14.5 oz) HCF evaporated milk
3 cups drained canned fruit (peaches, pineapple or apple)
1/2 cup chopped pecans (optional)
1/4 cup sugar
Heat oven to 350 degrees.
Spray a 2-quart baking dish with non-stick cooking spray; set aside.
Combine pancake mix and HCF evaporated milk in a small mixing bowl; stir well.
Pour mixture into prepared baking dish.
Arrange drained canned fruit over batter.
Evenly sprinkle fruit wit pecans and sugar.
Bake on the middle oven rack for 30 minutes.
Let cobbler cool for 10 minutes before serving
