12 to 14 "C" size red potatoes (about 1 pound)
1 tablespoon butter
2 green onions with tops
1/2 teaspoon salt
1/2 teaspoon coarse ground black pepper
Wash potatoes, cut in half and place in a microwave-safe dish. Dot potatoes with butter. Cover and microwave on High power 8 to 12 minutes, stirring halfway through.
While potatoes cook, chop green onions.
Toss potatoes with green onions, salt and pepper. Cover to keep warm until ready to serve.
