3 c. each: small scoops of Honeydew and Golden Kiss melon
2 Tbsp. fresh mint leaves, cut into bite-size pieces
2 oz. thinly sliced prosciutto, each slice cut into thin strips
½ c. shaved or shredded Parmesan cheese
Combine melon balls, mint leaves, and lemon juice on a salad platter.
Arrange prosciutto strips among melon pieces and sprinkle with Parmesan. Season with fresh cracked black pepper and garnish with mint sprigs.
