1 lb. Ahi tuna steaks, fresh or frozen (or substitute chicken)
1 English cucumber, cut into quarters, seeds removed, and cut diagonally
1/4 c. cup capers, roughly chopped
1 bunch parsley, chopped
1 red onion, small, diced
1 can (12-15 oz.) artichokes in water, rinsed, drained, and quartered
1/4 c. olive oil
1/4 c. balsamic vinaigrette
Preheat oven or grill to High. Thaw tuna if frozen.
Place tuna on grill and cook to desired doneness. Remove and cool.
Meanwhile, combine remaining ingredients.
Chop tuna into small pieces and incorporate into salad.
Cover and chill until ready to serve.
