Ingredients

1  Tbsp.  canola oil

1 1/2  c.  eggplant, diced

1 1/2  c.  H-E-B Fajita Style Frozen Peppers

2  c.  H-E-B Frozen Grilled Zucchini

1  tsp.  garlic powder

*  salt

8  corn tortillas

*  H-E-B Green Chile Tomatillo Salsa

3/4  c.  H-E-B Mexican Shredded Cheese

Instructions


Heat oil over High heat in large skillet.

Add eggplant and vegetables. Sauté until brown, about 7 minutes. Add garlic powder and salt, to taste.

Heat tortillas in microwave or on a skillet.

Layer vegetables and salsa on tortillas. Top with cheese.

Fold into a fajita.
