1 1/2 pounds roma tomatoes, medium sized
1 1/2 pounds French green beans, fresh, trimmed and steamed to crisp-tender stage
4 1/2 tablespoons wine vinegar
1/4 cup olive oil, extra virgin light
1/2 teaspoon salt
1/2 teaspoon fresh ground black pepper
1 tablespoon French mustard
1 tablespoon sugar
2 cloves fresh garlic, minced
1 red onion, small and thinly sliced (for garnish)
12 sprigs curly endive (for garnish)
Steam green beans, removing lid every 3 to 4 minutes.
(This keeps beans bright green in color. Steam beans to a crisp-tender texture (don't overcook). Rinse in cold water to stop cooking process.
Place drained beans and sliced tomatoes in a large glass bowl.
Marinade Dressing: Place all marinade ingredients in a quart-size glass jar with screw-top lid and shake vigorously until they are well mixed.Pour dressing over the green beans and tomatoes, and gently toss until the vegetables are mixed and coated with the dressing.
Cover with plastic wrap and chill
