Ingredients

1 1/2  c.  H-E-B Select Green Beans

1 1/2  c.  H-E-B Select Parasienne Carrots

4  radishes, thin sliced

1  c.  H-E-B Champagne Tomatoes, halved

1  c.  sliced mushrooms

1/2  c.  green onion, chopped

1/4  c.  fresh basil, chopped

•  juice of 2 lemons

2  Tbsp.  H-E-B Extra Virgin Olive Oil

•  salt and pepper, to taste

Instructions


Combine green beans, carrots and 2 tablespoons water in a microwave-safe dish, cover with plastic and heat on high power 4 minutes. Immerse in cold water and drain.

Combine cooked vegetables, radish slices, tomatoes, mushrooms, onion, basil, lemon juice and olive oil in a large bowl. Season with salt and pepper to taste. Toss ingredients, cover with plastic and chill 2 hours.
