1 tbsp. fresh lime juice
1 tbsp. olive oil
1/8 teaspoon crushed red pepper (optional)
1 (14.5 ounce) can Hill Country Fare sliced carrots: no salt added, drained
1 (8 ounce) can crushed pineapple in juice
1/4 cup chopped cilantro or parsley
Combine lime juice, olive oil and red pepper in a medium-size bowl.
Add carrots, pineapple with juice and cilantro or parsley; stir to combine.
Cover with plastic wrap and chill for 30 minutes or until ready to serve
