Ingredients

2  cups  Chopped H-E-B rotisserie chicken (trim fat & skin)

1  container (12 oz.)  H-E-B ready fresh go pico de mango

1/4  cup each:  H-E-B fat free sour cream

1  cup  H-E-B ready fresh go chopped celery

1/3  cup  Hill Country Fare pecan pieces

6  H-E-B ready fresh go lettuce leaves

Instructions


Combine the chopped chicken, HEB Ready Fresh Go Pico de Mango, fat free sour cream, celery and pecan pieces in a large mixing bowl. Season the chicken salad to taste with salt and pepper. Cover the salad with plastic wrap and chill for 30 minutes or more.

Before serving, place an HEB Ready Fresh Go Lettuce Leaf on each plate and scoop 1/2 cup of chicken salad over each lettuce leaf. Serve chilled.
