1  can  (14 1/2 oz) Hill Country Fare Cut Beets: no salt added, drained

1  cup  fresh orange sections

1/2  small onion, thinly sliced and separated into rings

4  cups  leaf spinach, torn into bite-size pieces

1  cup  shredded Monterrey Jack cheese

1/4  cup  blush vinaigrette


Layer beets, orange sections, onion, spinach leaves and cheese in a large salad bowl.

Cover with plastic wrap and chill for 30 minutes or until ready to serve.

Before serving, add vinaigrette; toss to coat.

Season to taste with cracked black pepper
