2 c. small elbow macaroni
1 1/2 teaspoons vegetable oil
1/2 lb. lean ground beef
1 can (14.5 oz.) Hill Country Fare Diced Tomatoes Chili-ready or 2 c. Pico de Gallo
1 c. Shredded H-E-B Easy Melt Cheese
Heat oven to 375°F. Spray a 2-quart baking dish with non-stick cooking spray; set aside.
Cook macaroni according to package directions. Drain and set aside.
Heat the same cooking pot over high heat for 3 minutes and then add oil.
Add ground beef and stir-fry for 8 minutes until meat is crispy brown.
Remove from heat and add tomatoes or pico de gallo and cooked macaroni; stir to combine. Add shredded cheese to mixture and stir to combine.
Evenly spread macaroni mixture in prepared baking dish. Loosely cover with foil and bake for 10-15 minutes.
Remove foil and bake 5 more minutes.
