1 large red bell pepper, chopped
2 stalks celery, chopped
1 (11 oz.) box long grain and wild rice mix
1 (15 1/4 oz.) can corn, drained (or 1 10 ounce package frozen corn)
1 cup pecans, chopped
Coat a skillet with cooking spray.
Saute pepper and celery until tender, 4 to 5 minutes.
Prepare the rice according to the directions on the box.
Season to taste.
During the last 2 to 3 minutes of cooking, add the peppers, celery, corn, and pecans.
