These delicious pancakes will help you start your day off right!
1/2 cup all-purpose flour
3 teaspoons baking powder
1 teaspoon cinnamon
1 teaspoon nutmeg
1 teaspoon allspice
3 tablespoons sugar
1/4 teaspoon salt
1/4 cup skim milk
1/2 cup club soda
1 egg yolk
1/4 cup lite canned pumpkin
1 teaspoon vanilla
1 Tbsp. canola oil
2 egg whites
In a large bowl, combine dry ingredients.
Add milk, club soda, egg yolk, pumpkin, vanilla and oil; beat well.
In a separate bowl, beat the egg whites on high speed until stiff peaks form.
Carefully fold the egg whites into batter.
Lightly spray a regular or large nonstick skillet with cooking spray.
Place the skillet over medium-high heat; drop the batter on the skillet by tablespoons to form 2-inch pancakes; cook until golden brown on each side.
