butter

lime zest

![]() Instructions ![]() Rinse fillets under cold water and pat dry with paper towels. Cut fillets in half. Season both sides with salt and pepper.
![]() Chop onion very finely to mince. Zest lime; zest only the outer portion of the peel, avoiding the white bitter pith. Squeeze lime for juice.
![]() Heat a large, non-stick skillet over medium-high heat 2 minutes. Melt 1 teaspoon butter in skillet; tilt skillet to coat bottom. Add cod; cook 2 1/2 to 4 minutes per side for 1/2 to 3/4-inch thick pieces. Remove to a plate and keep warm.
![]() Melt 2 teaspoons butter in skillet over Medium heat. Add onion and Sauté 1 minute. Add lime juice; stir and heat very briefly. Add remaining 3 tablespoons butter and stir to melt. Heat 1 minute or until butter is frothy and golden.
![]() Stir in zest; pour sauce over cod. Garnish with parsley, if desired, and serve immediately.
