3 eggs, lightly beaten
1/4 cup water
1 cup HEB Lemon Poppyseed Salad Dressing plus one more tablespoon
1 box lemon cake mix
2 tbsp. lemon juice (juice of one lemon)
1/4 cup light brown sugar, packed
Heat oven to 350 degrees. Spray muffin tins with non-stick cooking spray.
Mix eggs, water and 1 cup dressing in a large bowl.
Slowly add dry cake mix, stirring until just blended.
Fill muffin tins half full and bake for 18-20 minutes.
Combine lemon juice, brown sugar and remaining 1 tablespoon dressing; stir until dissolved. Drizzle over muffins hot from the oven.
