4 Tbsp. canola oil, divided
2 Tbsp. lemon pepper
1 whole fryer chicken, cut into 8 pieces
3 Tbsp. chopped tarragon
2 large potatoes, diced
1 bunch broccolini, trim 1-inch off stalks
Preheat oven to 400°F.
In a medium bowl mix 1/2 of oil with lemon pepper. Add chicken and turn to coat. Spread chicken out evenly on a lined baking dish and bake 10 minutes.
Meanwhile, mix remaining oil with tarragon, potatoes and broccolini. Spread out on a baking sheet.
After chicken has baked 10 minutes, place baking sheet with potatoes and broccolini in oven and bake 20 minutes or until chicken is golden brown and potatoes are tender.
