1 lb. bunch asparagus, tough ends trimmed
1/4 c. H-E-B Basting Oil, divided
• salt and cracked black pepper, to taste
1/3 c. parmesan cheese, grated
1 tsp. lemon zest, very finely grated
Preheat oven to 450ºF. Line a baking sheet with foil and set aside.
Toss trimmed asparagus with half of basting oil, salt and pepper. Spread out on prepared pan.
Top with Parmesan cheese and lemon zest. Roast 5 minutes, or until asparagus is tender, but still crisp, and cheese is melted and slightly browned. Drizzle with remaining basting oil.
