1  rind and juice of one lemon

3/4  cup  milk

2  eggs

1  cup  sugar

3  cups  biscuit mix (2-6 oz packages)

1  cup  pecans, chopped


Heat oven to 350 degrees.

Spray a 8 1/2 x 4 1/2-inch loaf pan (1 1/2 quart) with non-stick cooking spray; set aside.

In a large mixing bowl combine, lemon rind and juice, eggs, milk and sugar; stir to blend.

Add biscuit mix and stir to combine.

Add chopped pecans and stir to combine.

Pour batter into prepared loaf pan and bake on middle rack of oven for 1 hour.

Remove from oven and let cool before cutting
