1 cup (1 medium) tomato, chopped
1 can (15 oz) HEB Sweet Peas: No Salt Added, drained
2 carrots, peeled and shredded
3 to 4 green onions, chopped (1/2 cup)
6 cups leaf spinach, cut into bite-size pieces
Layer tomato, peas, shredded carrot and green onion in a medium-size bowl.
Top with leaf spinach and chill until ready to serve.
Before serving, toss pea salad to combine.
Season to taste with salt and pepper.
Serve with your favorite salad dressing and enjoy! This salad can be prepared a day ahead of time
