1  Tbsp.  H-E-B Pure Olive Oil

1  lb.  pork tenderloin

1  Tbsp.  Adams Reserve Jerk Rub

•  Sauce:

1/2  c.  H-E-B More Fruit

2  Tbsp.  Dijon-style mustard

2  Tbsp.  orange juice

1  Tbsp.  grated fresh ginger


Rub oil over tenderloin on all sides; sprinkle with seasoning rub and set aside.

Preheat grill or heat a grill pan over medium-high heat. Sear tenderloin on all sides for about 10 minutes. Reduce heat to medium (for grill, move to cooler area); cover and cook pork to an internal temperature of 145°F (15 to 20 minutes).

Let stand 5 minutes to allow juices to redistribute; then cut into thin slices. Pork slices should be pink in the centers.

Meanwhile, whisk sauce ingredients together in a small saucepan; place over Medium-Low heat and cook 5 to 7 minutes, whisking constantly. Remove from heat and serve with pork slices.
