1 1/2 lbs. H-E-B Thick Sliced Jalapeño Bacon
1 lb. cooked shrimp, peeled & deveined with tails off
2 jalapeño peppers, seeds removed and cut into thin strips
1/2 cup H-E-B Panela Cheese, cut into 1/2-inch cubes
Heat oven to 450 degrees. Arrange 6 slices of bacon on a microwave safe tray. Microwave on High power for 3 1/2 minutes (bacon will be half cooked). Set the half-cooked bacon aside on paper towels drain. Microwave the remaining bacon as instructed above.
Cut bacon strips in half. Take one piece of bacon and place a shrimp, a cube of cheese and a strip of jalapeño in center. Roll bacon around shrimp, cheese and jalapeño and secure with toothpick.
Place bacon wrapped shrimp on a large baking sheet and bake for 10 to 15 minutes or until bacon is crisp. Serve warm.
