1 1/2  pounds  ground turkey

1 1/2  cups  soft bread crumbs

1  small onion, chopped

1/2  cup  tomato sauce

1  egg

2  cloves  garlic, crushed, or 1/2 teaspoon garlic powder

1 1/2  teaspoons  Italian seasoning

3/4  teaspoon  salt

3/4  teaspoon  black pepper

1/2  teaspoon  crushed red pepper flakes

1  (10 ounce) package  chopped frozen spinach, thawed and squeezed dry

1  cup  shredded mozzarella cheese

1/2  cup  shredded Parmesan cheese


Heat oven to 350 degrees.

Combine meat loaf ingredients thoroughly in a large bowl. Mix filling ingredients in a separate medium bowl.

Press meat mixture into an 8 x 14-inch rectangle about 1/2-inch thick on a large sheet of waxed paper. Spread filling over turkey, leaving a 3/4-inch border around edges. Roll from the short end in jellyroll fashion. Press turkey over filling at both ends and seal. Place seam side down on rack in open roasting pan. Sprinkle top with additional Parmesan cheese, if desired.

Bake 60 to 75 minutes until meat thermometer inserted in center of meat loaf reads 160 degrees. Cut into 1-inch thick slices to serve.
